S’mores Cookie Bars

Nothing says summertime like hot and gooey s’mores.

Made with graham cracker dough, marshmallow creme, and chocolate chips, these s’mores cookie bars are the perfect treat to pair with your favorite grilling recipes, summer side dishes, or favorite summertime salads.

Ingredients for S’mores Cookie Bar

Whip up these s’mores cookie bars with just a few staple pantry ingredients

  • 1/2 cup unsalted butter (softened)
  • 2/3 cup brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 3/4 cup crushed graham cracker crumbs (about 4 crackers)
  • 1/2 cup marshmallow creme
  • 1/2 cup milk chocolate chips

How to Make S’mores Cookie Bars

Step 1: Mix the Cookie Dough

To begin, preheat your oven to 350℉ and line an 8×8 baking dish with parchment paper.

Grab a mixing bowl and cream together the softened butter and brown sugar before mixing in the egg and vanilla.

Next, add the baking soda, salt, and flour to the dough, and then set the bowl aside and prepare the crushed graham crackers.

To prepare the graham cracker crumbs, place four crackers into a small plastic bag.

Then, using a rolling pin, lightly crush the cracker, and stir the crushed graham crackers into the dough mixture until just combined.

Step 2: Layer the S’mores Bars in a Prepared 8 x 8 Baking Dish

Gently press 3/4 of the dough into the bottom of your prepared baking dish.

Tip from Jen’s Kitchen: Lightly dip your fingers in flour to help prevent them from sticking to the dough.

Next, spread 1/2 cup of marshmallow creme on the bottom layer of dough.

(Hint, I found that warming the marshmallow creme in the microwave for 7-10 seconds made it easier to spread!)

Sprinkle 1/2 cup of milk chocolate chips on top of the marshmallow creme.

Then finish the s’mores bars by gently pressing the remaining dough on top of the marshmallow creme and chocolate chips.

(Note, some of the marshmallow creme and chocolate chips will be peeking through the top layer of dough.)

Step 3: Bake the S’mores Bars

Now it’s time to bake the cookie bars!

Pop the baking dish in the oven, and bake the s’mores bar for 20-25 minutes, or until the bars are golden brown.

Let them cool completely before serving and then dig in and enjoy!

Can I Use Homemade Marshmallow Creme to Make My S’mores Bars?

The short answer is yes, however, I honestly find it simpler to use store-bought.

But, if you’re feeling ambitious and you want to channel your inner Martha Stewart, I recommend trying this recipe from Sally’s Baking Addiction.

How To Store Your Leftover Bars

If you can avoid devouring the whole pan of bars in one sitting, then kudos. then the force is strong with you.

My husband would be so proud of my Star Wars reference, but I digress…

To store your leftover cookie bars, place them in an airtight container on the counter for up to 5-7 days.

To freeze your s’mores bars, place them in an airtight container, and place wax paper between each layer of bars.

The bars can be frozen for up to 6 months.

Just be sure to defrost them for several minutes at room temperature when you’re ready to eat them.

  • Gently press the remaining dough on top of the bar mixture. There should be some marshmallow creme and chocolate chips visible.

  • Bake for 20-25 minutes or until golden grown.

  • Let cool completely before cutting and serving.
